The sake "Nambu Bijin" is brewed using the Nanbu-style hand-brewing technique, with the average rice polishing ratio polished to 54% within the brewery and using medium-hard underground water from the Orizume Basenkyo Gorge for brewing. This ginjo brewery stores all unpasteurized sake in ice (refrigerators and thermal tanks at -4°C to -10°C), while all daiginjo and junmai ginjo sake are stored in refrigerators at 5°C or below. Other designated sake is stored in the brewery at 10°C or below, and aging is strictly controlled.
