For brewing, the water used is the clear underground water that flows through the area where the brewery was founded. This soft water, with a particularly low hardness even within Niigata Prefecture, is ideal for sake brewing and promotes gentle fermentation during brewing. It is the source of the pure, crisp flavor of the sake produced by Asahi Shuzo.
